With numerous and varied applications realized worldwide, Zenith Chrono is the ideal solution for companies that process high quality fruits and vegetables and are willing to optimally preserve the original color, viscosity and organoleptic properties inherent to the fresh product.

OVERVIEW

Zenith Chrono combines the advantages of traditional cold and hot extraction technologies with those related to the presence of an anaerobic environment. The principle of cold extraction prevents the transfer of unwanted aromas and chemicals (present in the seeds and peel) to the final product. This process takes place in the total absence of oxygen so as to slow down the natural enzymatic browning reaction. At the same time, the presence of a hot tank, positioned directly below the extractor, allows the enzymes to be inactivated instantaneously, preserving viscosity and limiting the effects of oxidation on the final product and the subsequent use of ascorbic acid to counteract them.
This multi-technology system is available in various versions, designed and manufactured to process fruit with and without stones without the use of rubber (rubber-free technology). It also comes with an HMI designed to manage all the process parameters of the products being processed.

PRODUCTS: continental fruit (with and without stone), tropical fruit (with and without stone), wild berries, vegetables.

Zenith Chrono Concept

Zenith Chrono Concept is the evolution of the first generation of Zenith Chrono extraction and inactivation systems. The Concept version features an improved hygienic design, compact and made entirely of stainless steel. It allows easy maintenance while meeting the hygienic standards of the world’s most stringent regulations. Due to the compact skid-mounted design, this plant can be shipped already assembled and wired, and easily introduced into an existing plant layout. In addition, its conformation allows the skid to be moved to multiple plants to carry out fractional productions according to the customer needs.

Giubileo represents years of experience and know-how in one machine. Thanks to its high recirculation flow-rate and the special geometry of its patented heat exchangers, the Eldorado Long-Run system can run at its maximum efficiency over long periods of time (over four weeks without intermediate clean-up), even in the presence of foreign bodies such as weeds, leaves, vines, etc. mixed together with the product.

The tube nest heat exchanger is a patented cold break/warm break/hot break treatment system for enzymatic inactivation of tomato.

The tube nest heat exchanger is a patented cold break/warm break/hot break treatment system for enzymatic inactivation of tomato.
Due to its tube nest structure, it allows products with different viscosities to be treated in an extremely flexible manner.
A single passage and a temperature between 55° C and 75°C (cold break) are necessary to obtain low-viscosity products, while high-viscosity products can be obtained by simply increasing the temperature (85°- 110°C) and applying a recirculation pump (hot break).

PRODUCTS: depending on the type of product to be obtained, enzymatic inactivation can be carried out between 55°-75° C for cold break or between 85°-110° C for hot break
