Processing and Transformation
The processing and transformation of tomatoes are fundamental stages of the season. We offer a complete range of machinery and advanced technological solutions to ensure optimal processing and high-quality packaging of tomatoes. From selection to transformation, every step is carefully monitored to guarantee the highest quality of the final product.
Our hydraulic transport system handles large quantities of tomatoes, ensuring efficient sorting and washing processes. Manual and electronic selection, using optical sensors and digital cameras, ensures that only the best tomatoes are processed. Our rubber-free chopping pump guarantees a uniform and fine consistency, optimizing the subsequent thermal treatment.
We use advanced technologies for enzymatic inactivation, both hot and cold, preserving the natural flavor and color of the tomatoes. Juice extraction is performed using our Giubileo extractor/refiner with adjustable paddles, ensuring high-quality juice with minimal residual moisture. Juice concentration is managed by evaporators using mechanical vapor recompression technology, achieving up to 98% steam savings and ensuring excellent product quality.
